In the height of the corona virus, and our inability to get to supermarkets because of this curfew, I foraged through my garden and made a very famous Lankan dish which is a moringa mallung. Moringa leaves have a lot of water, so this recipe needs no oil when you cook it.

- In a big bowl, mix all the ingredients together, ensuring that the moringa leaves are well mixed in with the shallot, coconut and chilli.
- Heat a flat frying pan over a high heat, and add the leaf mixture and cook whilst stirring for 3 minutes. Immediately take off the heat and continue to mix for another minute. Serve with rice and curry!
