Sri Lankans love their fish, especially their sun-dried fish or small whole fish. I love handella, which is very much like whitebait, and the practice is that you eat it whole. This is a very easy and simple dish to cook with minimal ingredients! So do try to give it a go.

- In a bowl, mix all the ingredients except the oil together. Allow to marinade for 10 minutes.
- Heat the oil over a high flame in a small deep bottom saucepan or a hopper pan. When the oil is hot, start frying the whitebait in batches, ensuring that they are cooked for a matter of 6 mins each. Turn over the whitebait halfway through cooking to ensure even browning on the fish.
- Once the fish is all cooked, lightly season with a pinch of salt and a small squeeze of lemon! Serve hot hot!
